So to fill today's depressing day I decided to cook some chicken. I'll start off with a Her crusted chicken breast and pair it with some Spaghetti instead of going the usual meatballs way. I have a beautiful herb garden with fresh herbs like thyme, oregano, rosemary, parsley, dill, basil and celery all growing. I'll incorporate some fresh herbs with fresh breadcrumbs to form a crisp crust on the chicken breast. Lets see how it turns out.
Other than my love for cooking today I am catching up on some random episodes of Ugly Betty. I just came across this show last year and this is my second time binge watching the show. America Ferrera is seriously brilliant in the show as Betty. I love that their are so many brilliant characters in the show. I really love the character of Justin as well and I absolutely adore the friendship between Daniel Meade and Betty. I just started the final season of the show and Betty has just been promoted to be a features editor at Mode over Mark and oh boy he is so not taking it well. Yikes!! I love how Betty is different but at the same time so confident being herself and not letting what others say about her get to her. Women characters like her really inspire me. So lets see how long I take to finish up with the last season(Hint: not very long) and see how I attempt to fill up that empty space within me with a new fiction show.
Job hunt still on. I wish it was a little easy though. Till then its up to my first love of cooking/baking and 2nd love of Fiction shows to fill up my time and distract me!
